specialties of Italy’s Piemonte, Vald’Aosta and Liguria
as shown by the names of the dishes in their respective dialects.

Other areas of the Italian peninsula are also represented,
keeping in mind that Italy’s cuisine is varied from province

to province, and in many cases, from city to city.
